Who I am

TL;DR: A holistic Registered Dietitian Nutritionist dedicated to using science-backed nutrition strategies to support healthy aging, optimize wellness, and help people thrive at every stage of life.

Hello! I'm Kate McPherson Petrucci, a Registered Dietitian Nutritionist (RDN) and the founder of Spoon & Fork.

I currently call Parker, Colorado home, but my journey has taken me from Austin, Texas, to Ann Arbor, Michigan, before eventually finding my way to Colorado. While I've lived in different places, one thing has remained constant throughout my life: a deep fascination with nutrition and its impact on health.

That passion became a career path in an unexpected way. While unpacking my first apartment at age 20, I came across an old booklight from my childhood. Tucked inside was a magazine clipping I had saved years earlier about the health benefits of coffee and tea. The moment I saw it, I realized that my interest in nutrition wasn't new. It had been with me all along. Inspired by that realization, I enrolled in nutrition courses and began pursuing what would become my life's work.

In 2008, I transferred to The University of Texas at Austin, where I earned a Bachelor of Science in Dietetics and completed the University's Coordinated Program in Dietetics in 2013. My education provided a strong foundation in nutritional science while teaching me how to translate research into personalized, realistic strategies that help people improve their health and quality of life.

Following graduation, I began my career with the ProMedica Health System in Toledo, Ohio, where I gained extensive experience providing medical nutrition therapy for individuals managing a wide range of acute and chronic health conditions. This clinical foundation strengthened my belief that nutrition is one of the most powerful tools we have to prevent disease, improve well-being, and support healthy aging.

Today, through Spoon & Fork, my mission is to help people cut through the noise of nutrition advice and focus on evidence-based, sustainable habits that create meaningful, lasting change. I take a holistic approach that considers the whole person, not just their symptoms or diagnosis, because true health is about more than what we eat. It's about creating a lifestyle that supports vitality, resilience, and well-being for years to come.

After relocating to Colorado, I expanded my practice beyond the hospital setting and into outpatient care, where I developed a special interest in digestive health and inflammation-related conditions. To better serve individuals struggling with complex food sensitivities and chronic symptoms, I became a Certified LEAP Therapist (CLT), specializing in nutrition strategies for IBS, IBD, celiac disease, migraines, and other autoimmune and inflammatory conditions.

I firmly believe that food is one of the most powerful tools we have to support both physical and mental well-being. Nutrition has the ability to enhance quality of life, improve daily function, and help people feel their best. My goal is to guide clients on their wellness journey with empathy, education, and evidence-based care.

With more than a decade of experience as a Registered Dietitian Nutritionist (RDN), I founded my own insurance-accepting private practice to make high-quality nutrition counseling more accessible. I combine clinical expertise with a compassionate, personalized approach, recognizing that every individual's health journey is unique. I value building collaborative relationships with my clients and creating realistic, sustainable strategies that fit their lifestyles, rather than relying on restrictive or one-size-fits-all solutions. Above all, I am passionate about helping people develop a positive relationship with food while improving their health, confidence, and overall well-being.

When I'm not working with clients, you'll likely find me exploring Colorado's trails, photographing wildflowers, chatting enthusiastically about native plants, tending to my growing native plant garden, experimenting in the kitchen, creating pottery, or spending quality time with my family.

Dr Lockie was trained at BYU, graduating in 2015. Dr Lockie is a great all-around chiropractor and as an athlete specializes in sports injuries.
